Alpha amylase

 Alpha-amylase is an enzyme that plays a crucial role in the digestion of carbohydrates in the human body. It is produced by the salivary glands and the pancreas and is responsible for breaking down complex carbohydrates, such as starches and glycogen, into simpler sugars like maltose and glucose. This process is essential because the body can only absorb and utilize these simpler sugars. In the mouth: The salivary glands release alpha-amylase into the saliva. When you chew food, the enzyme begins to break down starches in the food into maltose, which is a disaccharide (two sugar molecules linked together).
